INGREDIENTS
12 large prawns or shrimp
2 large garlic cloves, minced
2 small chillies, minced
3 spring onions, in rings
250 to 300 ml of oil
½ tablespoon sugar
1 teaspoon fish sauce
1 bunch coriander, chopped
DIRECTIONS

Clean the shrimp.

Heat the oil in the Skottel. The oil is hot enough to bake, when a piece of garlic is thrown into the oil and immediately rises up.

Fry the shrimp until they have a nice pink colour (+/- 2 minutes on each side). Remove from the oil. Pour away most of the oil, but leave about 2 tablespoons in the Skottel. If the oil starts to smoke, add the garlic, peppers and onions. Bake for 2 minutes; stir constantly. Add sugar and fish sauce. Put the shrimp back in the Skottel, mix well and serve immediately with slices of lemon and chopped coriander.
